Fusion Recipe: Thai Style BBQ Ribs

I have been playing around with the gai yang marinade recipe and was wondering if it would work with American-Style BBQ Ribs!

Marinade
- 2 tablespoons soy sauce
- 2 tablespoon Megachef fish sauce
- 2 tablespoons palm sugar
- 2 tablespoon Megachef oyster sauce
- 1 head of garlic
- 4 stalks lemongrass
- 1 tablespoon black pepper corns
- 4 coriander roots
Mash everything to a paste in a mortar and pestle. Marinate the ribs overnight
* I used oyster sauce here to push it to the savoury side. If you like your ribs sweeter replace the oyster sauce with dark sweet soy sauce.

Cover and place in the oven at 135°C for 2 hours

Uncover and turn oven to 220°C or under the grill for 10 minutes
Let the meat rest. Slice up and serve with Lion Brand Rice!
