Here’s what you’ll need:


1 Maesri Red Curry Simmer Sauce 250g

(each pack contains 1 aluminium pack of simmer sauce, enough for 2 servings)

300g Chicken breast or thigh

2 Thai eggplant or regular eggplant

1 Long red or green chili

2 Kaffir lime leaf or O-Cha Frozen Kaffir Lime Leaf

3 Sweet basil or O-Cha Frozen Sweet Basil Cubes

Simply add the simmer sauce to a pot, bring it to a boil, then add your sliced chicken breast, chopped Thai eggplant, long chili, and kaffir lime leaves.
