Yum Gai ลาบไก่


  • 400 g chicken breast fillet
  • 120 g unsalted cashews
  • 2 spring onions,
  • 1 stick lemongrass,
  • 1 Piece Ginger
  • 2 large fresh red chillies,
  • Coriander leaves

1. Pound garlic, chillies and Cock Brand Palm Sugar in a mortar and pestle. Stir in the Megachef Premium Fish Sauce and lime juice.

2. Place the chicken in a heavy-based saucepan and cover with the water. Bring to the boil. Remove from heat and leave the chicken to rest in the liquid (covered) for at least 40 minutes to cook completely. Drain and shred

3. Combine chicken with the spring onion, lemongrass, ginger, chilli, coriander and cashews

4. Pour on dressing and toss

5. Serve with Lion Brand Jasmine Rice /Lion Brand Glutinous Rice
